Recipes for all sausages

Just wondering if anyone can shed any light on what the difference is between "cow meat" and beef as they both feature in some of the recipes?

Hi Dave

Your right cow meat is from female animals & beef as we tend to buy from the male, the cow meat is from end of production animals that is to say when the are to old to produce milk, you will find that the fat on this type of meat is yellow and in manufacture the meat is cheaper.
