Do you want the gyros to put on the spit or the taste of gyros in a sausage?
Pre mix ? do you already have the flavourings and just want a sausage recipe to put the pre mix into?

Gyros is basically lamb marinated in olive oil, garlic, salt ,marjoram and lemon cooked on charcoal.
I think the EU made Greece export more of its lamb and it became pork

gyros sausage recipe

Postby largewhite » Mon Oct 08, 2012 6:48 pm

Hi snags, thanks for the reply.
If possible I would like to make the gyros flavoured sausage as authentic as poss., but I am also interested in the kebab style gyros.
I have an abundace of pork and lamb to use as necessary. It's the method and original recipe I need.

The thing is, there is no one recipe. This is a food common to a number of cultures, each with variations and in each area, variations on the variations. I'd say take what you like about the seasonings and technique, adapt it to a sausage and give it a shot. Keep working on it until you get it where you want it.

I've had nothing but rave reviews when I made this gyros recipe and it shouldn't be too difficult to adapt it to a sausage recipe...

To my palate I haven't tasted rosemary in a traditional one,I have seen a recipe that included some sumac and allspice though ,this would have been more Middle Eastern than a Greek one though.
Worth having a play as a fried patty and see what you like before you sausage them up.
