Beef sausage recipes

Can you recommend some good recipes for beef sausage? We are going to be making a couple of 20 lb batches, and I am uncertain regarding which spices and quantities of spices to use, salt, other ingredients. We're putting them in hog casings and then smoking them. My fiance has made sausages before, but has asked me to search for recipes, and most recipes I find are for pork sausage. Thanks!
