Alpaca Sausages or Salami??

Not much info in New Zealand relating to any Alpaca meat especially Sausages & Salami etc. Has this ever been discussed or does anyone know of recipes I could try? :? :?

Any recipe for lamb goat or venison would probably work.
My sister has a few I think she would kill me If I suggested eating one
yet to take the plunge still researching

The meat is quite lean, so you will likely need to add 20-25% fat for a decent sausage.

Hi are you still interested in Alpaca sausages or did you have any luck? I have been experimenting with Alpaca hot dogs. There is about 90% visual lean on the trims that I am using and we were all very dubious about how the texture would turn out. Even after the fine cut, it didn't have much gleam and we wondered if it would hold up without binders. The results were amazing. have also made plain BBQ sausages and chevapchichi with the trims and loved it. I do need some help with seasonings for Alpaca though if anyone has any ideas?
