Help!!! need a substitute for pig snout

I am planning on making Mortadella using the recipe from Rytek Kutas, it calls for pig snout which is not readily available. I can get feet and was thinking I could use them as an alternative if it is the natural gelatin that the recipe is looking for, or could add additional gelatin to make up for the lack of the snout in the recipe.

It'd be best to post the full ingredients list. Feet wouldn't be my first thought as a substitute.

I've done some more searching and found recipes that use pork belly to add fat to the lean pork butt. In all cases though they call for back fat (which I have).

Cheek/jowl has a gelatinous nature, it may be a cheap substitute.
