Whiskey Sausage Tips?

I am planning on making some whiskey sausage in a day or so.

Planning on reducing 1-L of whiskey by half, and mixing w/5# of pork and 1 1/2# of back fat. Salt, pepper, nutmeg, paprika, and a touch of sugar to taste.

Anyone have a good recipe they would like to share or a few tips?

Here you go Upsidasium......

Italian Fennel and Whiskey Sausage

3 Lbs lean meat
1 Tbsb. black pepper
3/4 Lb back fat
1/8 Tsp. ground allspice
4 garlic cloves, minced
1 Tsp. dried oregano
2 Tbsb. fennel seed")
1/2 cup whiskey
4 tsp kosher salt

Grind meat and fat together through a 3/8 inch plate.Add garlic,salt,spices and whiskey.Mix well with your hands.Shape into patties,or stuff into medium hog casings and tie into 5 inch links.Makes 4 pounds.
