Fresh All Natural Maple Links

Fresh All Natural Maple Links


5 lbs. ground pork (Boston butt)
1/2 teaspoon coriander
1 tablespoon salt
1 tablespoon ground sage
1 tablespoon ground fennel
1 tablespoon marjoram
16 ounces maple syrup*
1 tablespoon fine ground black pepper

Mix ingredients and stuff into natural casings.

*Don't skimp and use 'maple flavored'! It really makes a differance!

Note: Smaller casings are preferable, but not manditory.

All your recipes look great, xbec, I'm going to give them a go in time. The maple links here are similar to some that I made a while ago, the recipe is especially good for breakfast. True call on the maple syrup.

I wanted to bring this recipe to everyone's attention because it is delicious. I've converted it to metric to make it easier to try. I was surprised by the amount of maple syrup it called for and was worried that it would be too sweet, it's not. The spice blend complements the maple flavor and this makes a fine breakfast sausage in sheep casings. I used a very good maple syrup and this sausage has more spent on syrup than meat.

Pork shoulder and fat (80/20) 1000 g
Kosher salt 13 g
Mixed the night before

Coriander ground 0.85 g
Sage ground 1.3 g
Fennel ground 2.85 g
Marjoram 0.6 g
Black pepper fine ground 3.4 g
Maple syrup 200 g

That is a lot of maple syrup, are they hard to cook without burning?

Yes! Next time I have them I plan on poaching them before giving them a quick fry.

Made a batch and did a taste test. We found it a bit too sweet and heavy on the fennel flavor so will use the batch for sausage rolls instead. Back to Cumberland for breakfast.

The problem being that you used maple sugar ;) --- the "best" way is to use the trimmings from the maple bacon -- 80% pork shoulder to 20% bacon trim -- you also need additional spices
