Belgian Sausage

A small local butcher who has gone out of business used to make a Belgian sausage with cabbage in it, and I believe it was called Tripp. I am a novice sausage maker, and would love to attampt to make this delicious sausage, but am in need of a recipe. Any help would be much appreciated.

Well, I remember seeing a cabbage / meat sausage over at Gerry Fowler's long-defunct web page, though I have not tried it, not being a big fan of cabbage. Edit: I also found this in Rytek Kutas' book as I was looking up another piece of info.
Here it is:

Cabbage Sausage

1 Tablespoon white pepper
1 Teaspoon ground ginger
2 1/2 Tablespoon sage
2 Teaspoon ground nutmeg
1 Tablespoon thyme
1 Tablespoon cayenne pepper
5 Tablespoon salt
1 onion
3 1/2 pounds cabbage *remove core*
10 pounds pork butt

Boil the cabbage until tender. Drain and cool. Then grind it with the onion and meat. Add remaining ingredients and stuff into small casings. Refrigerate or freeze. It's a breakfast sausage. Enjoy!
