My own recipe, just got done stuffing a bunch, here is the recipe. I just fried some, it's delicious!
4 lbs pork butts
.5 lb fat (about 2100g combined)
37g salt
2 tbsp fresh rosemary
2 cloves garlic(minced)
1 tbsp fresh ground black pepper
2 tsp ground coriander
2 tsp red pepper flakes
1/2 cup ice water
