Greek Loukanika

Give these a try, my other half made these Greek sausages the other day, they were really good - we cooked them in the oven and had them with roasted vegetables.

1lb lean pork
1lb pork belly
1lb lamb leg or shoulder
1 onion finely chopped
4 cloves of garlic finely chopped
1tbspn ground corriander
1tbspn salt
1tspn ground cumin
1tspn ground black pepper
1tspn chopped thyme
grated zest from 1 orange
1/2 cup metaxa

Cube the meat, chill and grind (coarse)
Saute the onion & garlic and then chill
Mix all ingredients together
Stuff into casings & bang them in the fridge overnight

We didn't have any metaxa in so it was substituted for normal brandy which worked great.

Jonty they sound great. I am slowly working through a list of recipes I picked up here, I will add this to them and when I get round to trying them I will let you know.

I'm sure they are really nice, thanks for posting the recipe.
