Salmon Sausages

While I was in Canada earlier this year one of the large foodstores in Hamilton was advertising Salmon Sausages. I made enquiries and was told they were out of stock and that they were in fact delivered on Thursdays and usualy sold out same day. I was told they came from a West Coast suplier and were almost pure Salmon. Does anyone have a workable recipy for these?

Albeit I find the idea of a fish sausage repulsive, each to their own EH!

So here is a recipe, of which I haven't tried.

2lb Fish ( Salmon )
1 Egg beaten
1/2 Teaspoon celery salt
1/4 Teaspoon crushed mustard seed
1/4 Teaspoon black pepper crushed
1/4 Teaspoon ground bay leaf
1/4 Teaspoon ground cloves
1/4 Teaspoon ground ginger
1/4 Teaspoon mace
1/4 Teaspoon cardamom
1 Teaspoon sweet paprika
1 Teaspoon Lemon/Lime juice

I was in Canada in 1982, I was doing a canoeing expedition through the Rocky Mountains in Alberta, an experience of a lifetime.Got called back early due to the Falklands War.

Today I received some of Franco's cure mix, of which I have put to good use straight away.I used it with Canadian Maple Syrup, will post details of results in due coarse.
