Last week I made a small batch of Len Poli's Swiss Hot Dog recipe, and it was very close to out local white hot dog. the only change I made was using lemon extract instead of lemon peel. Next attempt will use a little less lemon and cut back on the NFDM and add some egg whites. (as per my local's ingredients list shows)

No, not in a while Paul. That would involve a lot of cleanup for a 3 lb test batch.. Happy New Year to ya!

Well it's been a couple years so I thought I'd bring this topic back up. Tonight I had a couple Zweigle's white hot dogs and there was a noticeable hint of caraway, which I have never noticed before, although I admit I only buy these once a year at best and maybe didn't pick up on it before. It was a pleasant surprise to me, and now I need to ask, does anyone have a recipe for a white sausage, bockwurst or weisswurst with caraway as one of the ingredients? I've been looking and have not found anything yet.
