Sweatbreads

So i woke up this morning with a hankering for Pancreas :shock: Sure, it sounds a little unusual, but that's how it went down. Luckily for me i happened to have some in the freezer. I like it simple....soaked, poached, pressed, breaded and fried.

Served with some greens and a garlic & red wine butter sauce.

Very tasty....the texture was creamy and flavor had a nice nutty quality. :drool:

I'm old and long in the tooth but my mind went back to the kill floor and doing inspections -- it was the bit 'nutty quality' -- reminded me checking for TB :shock:
But what do I know
