Sausage Roll mixes

Hi I just wondered if anyone had any sausage roll recipes? Im ok for the pastry but interested about your thoughts for the fillings. I made and smoked some sausages (cold smoked) recently then popped them into some pastry,( including the skins) and made smoked sausage rolls, which were an interesting twist. My butcher tells me he mixes a packet of sage and onion stuffing with his pork mince to get his sausage rolls..............anyone else have any ideas??????

If you have a good Cumberland sausage recipe ~~ use it as this is by far the best (pork) one that I do/sell

The other is a sundried tomato and basil chicken sausage roll ~~ I have a client that takes 100 a week :D

I don't have a recipe, but the best sausage rolls I've ever tasted came from a pub in Bristol. From the flavour, they undoubtedely contained cured pork - probably a touch of cure #1 in the mix and allowed to rest for a while before cooking, or just possibly a large proportion of green bacon.
