I have just made a west country apple cake today with the following recipe all I can say is WOW! If anyone wants have a go I'll think you will like it.

8 oz (225grm) of cooking apples peeled cored and chopped
juice of half a lemon
1 1/2 tsp of baking powder (one and a half tsps)
8 oz (225 grm) Plain flour (All Purpose)
4 oz (115 grm) Butter cut into small pieces
51/2 oz (165grm) Soft light brown sugar
1 egg beaten
2-3 tablespoons of milk
11/2 tsp of ground cinnamon (one and a half teaspoons)

Toss the apples with the lemon juice, sift the flour and the baking powder.
Rub in the butter until it resembles fine crumbs. Stir in 4 oz (115grm) of sugar, the apples and the egg.
Add enough milk to give a soft dropping consistency.
Grease and line a 7 inch round cake tin with baking parchment and pre heat the oven to 180c (350 f)
Transfer the mixture into the prepared tin . mix the remaining sugar and cinnamon and sprinkle over the mixture.
Put into the hot oven and bake for 45-50 minutes until firm to touch, leave to cool in tin for 10 minutes then transfer to wire rack to cool.
Enjoy it with some real West Country Cream
