Polish Kabanosy Slim Jims

Postby montanaSalami » Tue Nov 01, 2016 3:38 pm

I had some sheep casings around that I've been looking to use up. PITA to stuff, but near the end I pretty much had them figured out. Next batch will be easier. Damn tasty. :)

I did these in the smoker, but moved them into the stove to finish as it was getting late.

$6.99 a pound at the store. 5 pounds (less cooking weight) for about $10 or so. :)

My niece's favorite sausage snack. :D She's only four years old and told her dad not to run out of those.
Fashionably late will be stylishly hungry.

I'm sure that they're superb. What's the recipe/method?

Recipe from here

I used fennel instead of celery seeds.
