Oddley,

You must really make alot of burgers to justify purchasing one of those burger presses!

Personally, I have found the best burgers contain just two things - meat and salt. Of course, the meat must be of the best quality, with the right amount of fat pressed by hand between 3/4 and one of an inch thick, cooked on a BBQ and served still pink inside.

Made some last night.

Absolutely fantastic, everyone agreed.

I would have said the same as Aris until around 7PM last night but felt after all the positive comments here that it should be tried.

The results are incredible, each spice and flavouring is so carefully balanced that it results ONLY in enhancing the flavour of the beef without any overpowering flavour.

VERY WELL DONE Oddley! The best burgers I've EVER tasted. :D :D :D

Only one problem; Due to an error whist weighing out the Cumin and accidentally adding too much, I subsequently had to scale up the rest of the seasoning ingredients. As a result I now have enough seasoning pre-mix to make about 900 quarter pound burgers.

We bought some beef meddallions today, I might try and persuade my better half to let me mince them :) Mind you she bought me a car today to replace the one I blew up yesterday, so maybe I'll ask her how she would like them cooked.

Dave

Edit: Doh, I don't have any onion salt so I'll wait until I do.

Normally I'd agree with Aris I like my burgers simple (uncomplicated), however after all the rave revues it'll be rude not to try

For the make-up of this can I substitute grams for the % in the recipe for spice blends?

Spice mix
76.9231 % - 30 parts salt
10.2564 % - 4 parts black pepper
5.1282 % - 2 parts Sweet smoked paprika
5.1282 % - 2 part onion salt
2.5641 % - 1 part cumin seed powder

Spice mix
76.grm salt
10.grm black pepper
5.grm Sweet smoked paprika
5.grm onion salt
2.grm cumin seed powder

johnfb, use the parts, it's easier.

Spice mix
30 g - 30 parts salt
4 g - 4 parts black pepper
2 g - 2 parts Sweet smoked paprika
2 g - 2 part onion salt
1 g - 1 part cumin seed powder
Being right, only comes from being wrong.

I wish I'd done that!!
I wouldn't have ended up with one and a quarter kilos of seasoning if I had
I might send it to Franco, he could sell it on his site

I was going to ask you John, if you thought this would be good in the recipe section and then noticed it was, good idea.

Oddley,
In your recipe you say cumin seed powder.
Do you mean cumin seeds ground to a powder?
Roasted cumin seeds ground to a powder?
Or cumin powder (already ground)

I am itching to make these and this is now holding me up, so please answer as fast as you can, I am dying to give these a bash.
Cheers Mate
John

johnfb,
I use Pre-ground (shop bought) cumin seed powder.
