Last August I was in a hurry to cure some bacon so after advice from Richard I injected and wrapped .I want to do it again
Problem is I usually go with 2.5% salt and half that sugar at a 10% inject .If I try this I will end up with an oversaturated solution.
So what did I do? Yes wrote it down and lost it.

If I've understood correctly for a pumped brine at 2.5% salt, 1.25% sugar and 150PPM Nitrite it's:

Water 1000gm
Salt 360 gm
Sugar 200 gm
Nitrite (Cure #1) 41 gm

Assuming Franco's cure and injection at 10%.

Could you have injected half the salt and rubbed the other half on before vacuum packing?

Could you inject it as if it were a ham, following Oddleys pump and dry rub guidelines and adjust the salt in the rub to get your final 2.5%?

Thanks Lads Its not that I dont know the alternatives,its just that I did it once and Im frustrated that I cant remeber how. It was a simple inject and wrap.3 days and bacon.It came out rather well my cousins OH ate it every day for a week for brekkie.Ill give it till tomorrow and dry cure it with no sugar and give it a 20% injection of maple syrup.

Sorry I lied. I found my notes I injected half a combi cure and doubled up on the core#1
