I am a possum hunter from Kaitaia. I have been experimenting with diffrent possum recipes. I would like to make a tartare from the back leg meat. does anyone know if it is safe to eat possum raw?

Possum's can carry trichonosis so if I was dead set on doing it I would freeze it for at least 45 days before I prepared it. I can't get my mind off what I've seen these things eat. :shock:
