im looking at brining a 5.8kg turkey and 1kg pork loin in the same brine at the same time

brine is
dextrose ------150gr
salt------------ 450 gr
cure #1------- 120 gr
water ----------- 10 litres
then smoking turkey to 165*f IT and the loin to 152*f IT

can i put them both in the same brine together? they will be in jected but at dif times as turkey needs more time..i will keep out enough brine to inject loin before i but it in the brine ..thanks

You can ............ but I would not even if you paid me $1000

I will not quote CFIA rules, suffice to say cross contamination

Depending on how big the turkey is 2 days is what I do thighs/legs only unless 13+ kg then a shot in the breast.

Smoke the turkey 155/158 IT, let it rest and keep probe in ... you will see temp come up to 165 IT. If you take it to 165 IT as you suggest the bird will more than likely be on the dry side.

Been there, done it. I do our hams to 155 IT and they always come up to 165. turkey done same way.

thanks thats all the answer i needed ..its just as easy to keep them separated
