Its that time of year again for me to start making sausages, and I could use some opinions on an issue I had last year. Most all of last years product had a tough casing which I blamed on the casing itself, but started wondering if it could be the new smoker I'm using. Could a tough leathery casing be from to much airflow over the sausages, and do ya think adding humidity while smoking would help?

Sorry Dan,

I've got a bit of difficulty writing at present, but yes, I'd try adding a bit of humidity.

Are you slow smoking at low temps, or quickly at higher ones?

I find this method good:

Gradually raise temp of smokehouse to 165F Apply heavy smoke for about 4hrs.
Continue to cook sausage until the sausage's internal temp is 152F
Remove from smokehouse and cool with cold water until internal temp is 110F Allow to bloom till desired color is reached.
Place in Fridge overnight. Then cook or vac pac.
