has any one had any experience of curing lamb.I am about to send two lambs to slaughter and would like to cure some.

I was wondering about this myself - I thought perhaps I could make bacon (of sorts) out of a bonless loin which would be acceptable to some of my muslim friends.

In Scotland Mutton Hams are a traditional popular dish, I'll dig out the recipe for these if you're interested but it probably won't be posted for a week or so.?
