Eh, after having made any kind of sausage you realize that what it looks like mid-process isn't critical.
My hot dog emulsion wasn't pretty either (and Dan is right, I would have loved to have that uniform of an emulsion).
But if you just showed someone the video of the emulsion pumping into the holding tank, but them that it was hummus, would it have seemed so off-putting? Most people just like to ignore where there food actually comes from instead of embracing it like most hobbyist charcutiers have.

True, as someone who has made Frankfurter style sausage those processed meat tubes are in a class of their own.
But as a poor working shmuck whose retirement likely depends in part on the profits from those factory dogs boosting a mutual fund I'm invested in, I hope people keep buying those if they can't get their hands on something better. :mrgreen:
