i can not find anywhere that will tell me how much water to add to the rusk? can anyone help

I put a pint of water per 7kg of meat and 1 kg of rusk then mix and leave overnight. Obviously it needs to be moist enough to travel easily through your stuffing machine.

Rusk absorbtion ratios

I don�t think that the question was how much water to add to the sausage but rather how much water to add to the rusk portion of the sausage. Rusk will typically absorb between 1 � and twice its weight in water, though I would personally recommend using 1 to 1 � .
