Help please, first time sausage maker

Postby Big Geordie » Sat Dec 04, 2004 11:23 am

Hello, its my first attempt at sausage making this weekend. I have bought some hog casings from sausagemaking.org, but I am usure as to how much to soak. Can any one give me advice on "inches of casing needed per pound of meat" :?:

Many thanks

Hi Geordie

How long is a piece of string? It all depends on your mix wet/dry and how much do you want in your skins and of coarse what diameter are your skins. It is easier probally just to experiment and get a feel for it.

Try my theory to start with and work from there, 1 x hog skin per 10lb of mix, you may sometimes have some waste, but it will be negligable. If its not enough then you can have another skin ready very quickly anyway!

Good Luck

Sausage skin length required

Postby Parson Snows » Sat Dec 04, 2004 1:28 pm

The typical size of casing used for sausages is 28-30 mm. With this in mind hold the strand of casing typically in your left hand (as most people are right handed) then fully extend your left arm outwards parallel to your body. For the average person (fully grown) from the fingers tips to the tip of your nose (looking straight forward) will be approximately 36 inches (90 cm), enough for 500 g of sausage.

Hope that this helps you out

kind regards
