"Blooming" Sausages Question...

After having done all the preamble to stuffing sausage casings, I am now going to "Bloom" them ...(Let the flavor dissipate through the sausages...)

My question is: Should (can) I link them before "Blooming" or should they be left in a long coil while "Blooming."...Does it make any difference..???

Either way would be fine. I'd probably link first just because it's easy to do as you stuff.

If you let them sit for a while to bloom, the proteins will bind up and make it harder to link without blowout & ripped casings. I always link beforehand and let them sit overnight in the cooler.
