Coppa Prefered Mold?

I am about to embark on my first curing project. Chamber is up and running and I am working on procuring the Cure#2, a couple hooks, beef bung, and a mold starter culture.

The main question I have. Which starter culture should I use? Mold 600 seems to be the go to mold for most applications from my research, and the safest for a beginner to use.

It also seems to slow down the drying process significantly. I have read some threads on this forum that have people curing coppa for up to 5 months, but the LPoli recipe only cures for 17 days without adding mold. Thoughts?
