Hi I want to try bacon curing in the next few weeks - I have a vacuum sealer and bags but if the joint I get (from the supermarket :( ) is too large for my sealer I wonder if anyone has used one of the bags that is available for storing clothes etc.

Where you use a vacuum cleaner to suck out the air. The only drawback I could think of would be the plastic is unsuitable for food use - The bag I would use would be new and not used for storage previously.

any observations?

There's no need to use a vacuum for curing. I tend to use oversized zip-lock bags like the ones pictured below for my full belly cures and they work fine:

I just use large food bags for 'oversize' pieces. Cling film should also be fine (put it on a tray to catch any drips).

I would definitely use food-grade plastics for curing. I would avoid using plastics for extended contact with food, that were not definitely intended for use with food.
