low/no fat cheese?

I believe It's important to make sure you use a yogurt starter made from the same milk as you will be using, ie cows with cows , sheep with sheep etc.
I think some of the Greek yogurts are made with sheeps milk, I know I always check when I buy one. I dont know where I got this info, but it has stuck with me, and I always follow it.
