It's in really good condition, it had a bumpy ride home, so I am leaving it to settle, then I will clean it and sterilize it. I ve been watching them for a while, finding one near enough to pick up yourself is the most frustrating part.

:) Well my fridge is up and running and sporting 3 about to be 4 large hard cheeses, 1 Wensleydale, 1 smallholders (cheader type) 1 Lancashire and the other waiting to go in is another Wenslydale. I was wondering if I had too much moisture in my fridge, I have bandaged my cheese and the moisture comming out of them seems to be raising the humidity.Would I be better waxing them do you think, or should I let them dry out a bit longer before I put them in, anyone any ideas. I have just ordered a humidity meter which will give me a better idea( should have done that earlier I know!)

A bowl of salt in the bottom (if the humidity's too high)?
