Cheesey flavour to salami ??

My latest attempt at making fennel salami has been successful but there is a faint flavour of cheese!!, has anyone else ever had this situation (I won't say problem as it sort of tastes ok but seems such an incongruous flavour to be in this salami?). It wasn't ever exposed to any cheese (camembert type penicillium) that I can think of!
