I know of several out in my neck of the woods however, my preferred cultures are Chr Hansen cultures (bactoferm T-SPX or F-LC). Unfortunately I can not find these in Canada and usually order them from Butcher-Packer here http://www.butcher-packer.com/index.php ... &cPath=207
. The few cultures I have tried from other sources just never seemed to give me the flavour profile that I like so I now exclusively use those ones. They also carry mould cultures if you are looking for that as well along with other sausage supplies. Even with the shipping cost they are quick and usually reasonably priced.
