Help... lost recipe on salami kit

Hi

I was given a salami kit by a friend as they lost the recipe and didn't want to waste the kit.

I have the powder (Ingredients:Salt,Acidity regulator(575), pork protein, spices, dextrose, mineral salt, (451, 450) dehydrated vegetables, antioxidant (316), preservative, (250), stabilizer (452)
Contains Sodium Nitrite. ) the website where they got it says there is enough to make 4x800 gram salami, (and NO they wont give out the recipe again, if I want the recipe from them I have to buy another kit).

what meat and what quantities to go for?
I'm thinking 70/30 farmed pork to wild venison 3-3.3kg total weight

do I add a liquid or just work with the powder and the meat??

what would u do?

Well with the phosphates (450- 451) and nitrite (250) it's a cooked salami. I'd also might want to add some water due to the phosphate. If you pork is nice and fatty I'd go with what ya got.

thanks for the quick reply.

what kind of consistency should i be aiming for? i never made salami but have made saugages.
would i just work on adding water until i get the consistency of or close to a general sausage mix or should it be drier/wetter??
