I am also looking at doing some all beef sausages, but I have put this on hold a bit till the temperatures drop somewhat (we have been sitting at 40+ oC for the last weeks). I should be able to come up with something when it cools down. I am looking at using my recipe for beef burgers and making them into sausages, but as said, haven't gotten around it yet.
Have you had a look at Len Poli's site? Lots of recipes there, including some all beef ones.
