Hi All,

Can anyone offer a recipe for morcilla (Spanish black pud) - preferably the morcilla de burgos variety with rice?

Gracias!

Martin

A belated welcome! Nice balance!

There's a recipe for Morcilla on this website:

http://www.wedlinydomowe.com/sausage-recipes/morcilla.htm

I only came across it today. It looks like the Burgos variety using rice as a filler.

Thanks for that! It looks like the real thing, and that's a good site that I've not seen before. I have found one or two recipes in Spanish, but have always been surprised at the low quantity of blood vs rice, and not had confidence in my translation.

I'll report back when I've made some. Wish I could juggle them whilst unicycling, but juggling is soooo difficult even on two legs :D

I look forward to seeing the results, pity you can't email some to taste!

I love Morcilla, my family have spanish blood in them and I lived in Spain for a few years in my early twenties, I worked in a tapas bar while there and the chef once cooked us all a feast of meats piled up on a big plate in the middle of the table - never had morcilla as good as that day since, I think you've just convinced me to make some too.

Thanks,

Dave
