Hi. I was wondering if anyone knows how to acquire cure#2 in canada without being commercially licensed. The law only allows this because they say it can be used as an explosive. Are there any other alternatives to use? How long will sodium nitrite last in a dry cured product before being useless? Any help would be appreciated.

You do not need to be a commercial business to acquire it, I have been in there when hunters or home hobbyist get there supplies.

What you are thinking about is Saltpetre which is on the restricted list (and has been since earl 2000 due to things that happened down south) and paperwork is a nightmare

CFIA are recommending that records (usage) of Prague powder 1 and 2 be kept. This is for people in the trade as we should be using/filling out our HACCP sheets -- it's called traceability if Jo Blow gets sick or worse

It also might help if you update you profile to give general location in this vast country

Results for you as someone else asked me somewhat the same question so contacted my supplier and got answers

You can contact the below as a lay person and buy from them (I use the same supplier but in BC) the only thing that you will not :?: get is trade prices. Hope the links/addresses are useful

I'm in Niagara falls and I can get it pretty much anywhere. Where are you in southern Ontario?

Thanks for the info. I got a hold of unipac and they said that I could not order it from them. They suggested that I try to see if someone from the US would ship it here. I live in Brantford,ON

Hey Konhead, you might want to check out The SausageMaker.com in Buffalo NY, although I don't know the cost, they advertise shipping to Canada. Or do a road trip to the States, just check with Canadian Customs first.

Malabar Super Spice in Burlington carries it. Cure #1 is called Sure Cure #7603 on their order list. Cure #2 isn't listed on the website but it is called Dry and Semi-Dry Cure #7605 on the order list. Thursdays and Fridays only they open to the public and have every sausage supply you could possibly need. The cure #2 is about $7 a kilo, much cheaper than ordering from the U.S.
