1 Can Heinz beans
1 Small cooking Apple peeled, cored & chopped.
1 Small Onion halved & sliced
4 Rashers Smoked Bacon cut into strips.
2 Tbp Black Strap Molasses
5 Tbp BBQ sauce
1 Tbp Brown sugar
2 Tbp Sultanas
1/2 cup apple juice
2 Tsp liquid smoke
Place all ingredients except liquid smoke in a suitable casserole dish, mix well and place uncovered in oven 150C. Stir every 45 mins until the liquid begins to thicken and forms a skin, then stir in the liquid smoke, cover with foil and cook for a further 30mins. This can be done quicker in a hotter oven or microwave however best results are from a slow cook.
Smoker Method when cooking Ribs.
Substitute the BBQ sauce with Ketchup
Substitute the bacon with smoked pork, left overs from pulled pork or ribs
Omit the liquid smoke
Place all ingredients in a suitable casserole dish, mix well and place uncovered in the smoker, If you can place the dish under the ribs to catch the drippings.
After the smoking stage cover with foil and leave in smoker until ribs are ready.
If it gets too dry at the later stages add more apple juice.
