One of my best bread recipes

1 oz/35 gms fresh yeast
500 cc/2 cups lukewarm water
½ tsp sugar
2 tsp salt
2 tbsp vegetable oil (optional, but the bread will keep longer)
ca 1.1 litre/4½ cups wheat flour (best quality!)
100 cc/½ cup Graham flour/whole wheat flour
50 cc/1/4 cup wheat bran

Dissolve the yeast and sugar in 50 cc of the water and mix with 50 cc wheat flour. Cover and set aside for ½ hour.
Mix with the rest and knead thoroughly for 5-10 minutes. Let rise to double size (ca 1 hour).
Heat the oven to 260 C/500 F. Form two baguettes, place on a greased baking tray and let rise for another ½ hour. Make a few deep cuts in the loaves with a razorblade.
Spray the baking tray and loaves generously with water and put in the oven. Bake for 10 minutes, reduce heat to 170 C/340 F and bake for another 35 minutes.

This is not a rough bread. The Graham and bran are used in only small amounts for reasons of taste only. They boost the delicate flavour of the best wheat (which IMO is American Northern Spring - now available even over here).
