'Shop Bought' Burger Buns

Well, I've gone and done it! I think I may have found a recipe that makes pappy, horrible 'shop bought' burger buns that are even more like their evil supermarkup counterparts than the infamous Wheels Rolls.

I've not tried the recipe yet, but these certainly look the business:

Now, do I really want to be seen buying instant mashed potato?

This is a good formula for a middle of the road bun, not as terrible as the store bought nothings, but has a bit of texture and still holds up well. I make mine more to a hoagie roll, but this formula is pretty close, cut the sugar by half, use autolese for a good gluten development.

Interesting though, as I have a foccacia recipe that has mashed potato as the secret ingredient and I was thinking of substituting some instant mash :oops: . When I say I, I of course mean I copied it from a Gary Rhodes recipe :).

It seems to be a fairly common ingredient in some types of foccacia:

ATM I'm trying to get a sour-dough to fit in with my lifestyle. I want my fresh bread for lunch, not supper! It may be some time before I make the roll recipe.

So what is the conversion into our measurements, does anyone know.

1 1/4 cups water
2 1/2 teaspoons yeast
1 tablespoon honey crystals (sugar is fine)
1/4 cup instant mashed potatoes
3 cups bread flour (13 1/2 oz.)
1 teaspoon salt
2 tablespoon olive oil


Will SMASH do?

I hope so as that's what I used :lol: Made a very runny dough but I didn't want to add more flour on this first attempt so put it in a loaf tin. Very nice bread but I'm not sure it's burger bun :) Far too sweet for our taste too.

I'm not surprised about the sweetness; personally I'd omit the honey/sugar.

Given the hydration (exc potato) of 63%, I'm surprised about it being runny.

I think that instead of making these I may have a play with mashed potato added to my recipe - It'll mean waiting until the main crop potatoes are in though.
