Air dried cured Meat Techniques

Postby NCPaul » Sat Nov 17, 2012 12:38 pm

does the warm weather i have in the place i live will spoil the meat ?

The meat should be kept cool (36F) during the entire brining time and after it is removed from the brine. It should take about two days to equalize after brining.
Fashionably late will be stylishly hungry.

Once ready, how long will the jambon keep refrigerated and frozen?
Thanks,
Ricardo.
