Basic Question - Use By Date

Hi,

Completey new to this!

Bought some pork belly last week to start curing and didn't get round to having time to cure until the day of "Use By Date" on the pack.

Maybe a stupid question, but how long do the preservative take to work ? e.g. should I ensure I have at least a couple of days shelf-life for the curing to take hold, before the mould does ? :)

Ive done it more than once but thats not to say ive just been lucky.
Nitrite is very quick.
