Hi I have got a pancetta in the fridge now and it was started 21 days ago.

I followed the recipe on wheels site to the T.

Anyway it has now lost 14% of its weight and was doing fine until I opened the fridge this morning, I noticed there is white mould on it not loads but enough to make me think it is going bad.

It does not smell bad or anything so I whipped it off with a bit of kitchen roll and put it back in and thought I better ask one of the experts.

Is it ok or is it going bad?

Hi Coldcure,
It's hard to say....there are a lot of molds out there. For the most part we encourage white mold by inoculating with a known "good" strain. If it concerns you, wipe it down with a 50/50 water/vinegar solution. The vinegar should keep it away.
I wouldn't be concerned at this stage. Just play the waiting game, and it aint an easy thing, until you hit your weight loss target.
