thought i would show you guys a little work i did today

I Started early this yr due to family issues

so picked up a nice 120kg sow and broke her down , it was so
much work i forgot how hard it is.

any way mixed a variety of salami's
tuscan - sopressa - fennel and pepper 40kg worth , they are
in the curing room for the night now

also got 4 nice size coppa pieces that are in the fridge
marinating in their dry rub.

tomorrow i have all the rolled pancetta and Lonzino to make up

and then for dinner tonight got 2 nice fillet that i have done Chinese bbq
style

Thanks for this fandt66, am soon to take delivery of half carcass myself, questions: did you pre-prep the cures for the whole muscles?, also, would you have any idea what roughly the total weight of the loin and the collar individually were. This is my first half carcass and am trying to prepare as much stuff before it comes so that things run as smoothly as poss!

all the cures mixtures etc were done then and there

IE: trimmed up loin weighed then made up the mix

its difficult to pre make the cures because you never know what the exact
weights will be and you might make up a mix for say 1.5kg but then have
a piece 1.8kg so you then have to trim down and have wastage.

i cut and trim everything up and place them all separately on a bench and
then just work my way through it one by one mixing it all to suit what is infront of me

the collars were huge after trimming and cutting in half have 4 pieces at roughly 1.4kg each

I intend to make a large batch (sufficient to do each muscle) but just needed an idea so that I don't too little, I will vac pac the mix before and after and hope there isn't too much excess!!, but it shouldn't degrade that quickly and before my next project leastways.
