Dry curing using a plastic box question:

If I dry cure my pork in a plastic container, each day when I remove the lid to turn the pork over, do I drain off the excess liquid or just leave it in the container for the period of dry curing process? I have looked at the plastic zip lock bag method, and I presume that the liquid is allowed to remain in the bag, however I am unsure regarding the alternative method of using a plastic container, look forward to a bit of guidance, thanks.

I leave the liquid in when dry curing in ziplock bags, I'd do the same in a plastic container. There shouldn't be much liquid.

Thanks for that information, I intend to begin my first dry cure attempt tomorrow.
