Hi Oddley,

Could you send me a copy of the spreadsheet as well? It looks really useful.

Regarding the "percentage pump": what does it mean? If there is a 115% pump does that mean you pump in a weight of brine that is 115% the weight of the meat? Would you then place the pumped meat into a brine? I am a bit confused about this :shock:

(i believe) it means you pump the meat with brine to 115% it's original weight, ie 1000g meat is pumped in different places thoughout until a weight is gained of 1115g (meat plus injected brine). you then place the pumped meat in the remaining brine . . . and continue as per recipe/instructions.

For an immersion brine the pickup rate of the brine is normally between 8-10%, I normally calculate it at 10%.
