aris- the wood is just regular pine, spruce or fir not treated lumber. we use "sanded" lumber so no splinters pierce the casings. after we are done pressing we spray them down with a 2 part water 1 part bleach solution and leave them air dry for about a month before storing them. if you are going to do a small batch or are worried about sanitation I guess you could use a plastic chopping board.
