Had a busy day today, made 4lbs of fresh Chicken sausage with my new no name chinese 700 watt grinder, for 50 dollars i wasnt expecting much, to my suprise it preformed very well, didnt even get it faster than the half speed, Used 100% thighs with skin and looks just right fat wise, left it the freezer a bit too long and it was grinding ice a bit but no troubles, if i had to critisise it i would say its noisy, plus it only has 2 plates, 8mm and 4mm, oh and 2 more but for using as a stuffer i think. here is a link to it

I also bought a nice side of Salmon because i had been reading Wheels site and didnt realise how easy it seems to do home made smoked salmon (well seems easy on your site Wheels :D ) had to cut it in 2 because my smoker isnt wide enough for a whole side, its in the ref covered in Italian sea salt until tomorrow.

There are many machines similar to this one, and they tend to get good reviews. What size are the plates? They're often a universal size and so you should be able to but compatible ones with different hole sizes.

You're correct that smoking salmon is simple - the hardest part is slicing it!

Which recipe did you use for the sausage.

I used this recipe, i did add the skin from the thighs

Chicken thigh meat and fat 1100 g (from 8 thighs)
Chicken stock (homemade) 225 mL (1 cup)
Fresh bay leaves 2
Dried lemon peel 1.5 g (1 t)
Fresh garlic clove chopped 2 g
Fresh thyme 1.5 g (1 t)
Fresh parsley chopped 4 g (1 T)
Black pepper 2 g (1 t)
Salt 21 g (1 1/2 T Morton kosher)
Breadcrumbs 75 g (3/4 c)

The lemon peel was fresh from my garden, we tasted a patty before stuffing, wife who is filipino said it needed something, she proceeded to put in some "Giniesa" mix which is a Philippines favorite (not sure whats in it but MSG for sure) and she was right, very tasty, blooming in the ref as i type along with the salmon which is getting smoked tonight as its just a little too warm during the day still.

Didnt even get chance to link them yes they are delicious :D

So 2 lots of fresh sausage under my belt, my daughter will be here from UK Sunday is carrying rusk and phosphate so my next will be Cumberland from the polly perkins recipe here.

Would like to try Salami, im setting up a chamber :shock: oh dear lol going to need lots of help
