Good substitute for breakfast pork sausage?

I'd like to make my amazing biscuits and gravy recipe for my friends, but they doesn't eat pork. I don't think the average turkey or chicken sausage will bring the same type of flavor. I was wondering if anyone has found a good substitute that has a similar flavor profile to the pork sausage. Perhaps a beef-based sausage would do the trick? :D

I don't care fro turkey and chicken sausage, so I would also look at beef or maybe lamb.
How serious are they about not eating pork as you might not be able to use pork casing.

Use any brkfst sausage recipe, up the herb content keep the salt percentages the same and use dark meat chicken this will get you close.
