Morning everyone,

I live in the shires and have access to lots of venison, mainly muntjac and fallow but also Chinese water deer as an when they are managed. I have really honed my butchery skills over the last few years but have really wanted to start making some salami as now looking to do more than just joints and minced.

I was wandering if anyone had any recipes they could share with me for salami, sausage etc if so I would appreciate it greatly.
