Hi Guys

This question has probably been asked a thousand times but just can't seem to find an answer using the search facility.

How long will fresh salted sausage casings last for?

Indefinitely.... Really.

I recently bought stock and equipment from a producer in Thailand that went out of business. I thought his casings would be junk, but shipped them anyway. Turns out they are perfect, and some of them are dated 4 years ago...

No issues at all.

As long as you keep them well salted/brined they will last basically forever. While it is always best to use them in a timely manner, I have some that are 3 years old and have no odor or other features of degradation. If you keep them well salted nothing will grow and they remain stable.
